First, the interjection is mandatory: bare <em>Se \u00e8 buono!<\/em> on its own sounds incomplete, but with <em>caspita, eccome, altroch\u00e9<\/em> in front, the sentence stands. Second, the verb stays in the indicative, not the subjunctive. <em>Caspita se sia buono!<\/em> would be a strange hybrid; the colloquial weight needs the directness of <em>\u00e8<\/em>, not the hedging of <em>sia<\/em>.
