Knowing how to read a menu, ask the waiter a question, and pay the bill in Italian will make your trip much smoother, and a few set phrases go a long way at A1 level.<\/p>\n\n<p class=\"wp-block-paragraph\">This guide collects the words and short sentences you actually need at the table. You will see the structure of a typical meal, the four moments of the day (breakfast, lunch, supper, dessert), the names of dishes and drinks, and the polite phrases to use with the waiter. At the end you will find a short quiz to test what you learned.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"colazione\">La colazione: breakfast when eating out in Italy<\/h2>\n\n<p class=\"wp-block-paragraph\">Italian breakfast is very simple. People have their <em>colazione<\/em> at home or at a cafeteria, which in Italy we simply call a <em>bar<\/em>. The usual order is a <em>caffelatte<\/em> (coffee and milk), a <em>cappuccino<\/em>, or a plain <em>caff\u00e8<\/em> with a sweet pastry, a <em>brioche<\/em> or a <em>cornetto<\/em> (croissant).<\/p>\n\n<p class=\"wp-block-paragraph\">Two practical rules at breakfast time: at the counter (<em>al banco<\/em>) you pay less than at the table (<em>al tavolo<\/em>), and you usually pay the cashier first, then bring the receipt to the barista.<\/p>\n\n<p class=\"wp-block-paragraph\">In a B&amp;B or an <em>agriturismo<\/em>, breakfast can be more substantial: <em>salame<\/em> and <em>prosciutto<\/em>, <em>formaggio<\/em> (cheese), <em>pane<\/em> (bread) and <em>dolci fatti in casa<\/em> (homemade cakes). The <em>salumiere<\/em> (deli owner) will prepare it the way you like.<\/p>\n\n<p class=\"wp-block-paragraph\">Another good and cheap option is the <em>men\u00f9 a 10 euro<\/em>, also called <em>men\u00f9 turistico<\/em>: a set lunch with a <em>primo piatto<\/em> (pasta or risotto), a <em>secondo piatto<\/em> of <em>carne o pesce<\/em> (meat or fish), a <em>contorno di verdura<\/em> (side dish, often <em>patate, pomodori, insalata verde<\/em>), <em>pane<\/em>, <em>acqua<\/em>, sometimes a quarter litre of <em>vino della casa<\/em>, and almost always a final <em>caff\u00e8<\/em>.<\/p>\n\n<p class=\"wp-block-paragraph\">If your budget allows a full lunch in a <em>trattoria<\/em> or <em>ristorante<\/em>, the courses of a classic Italian meal are: <em>antipasto<\/em> (appetizer), <em>primo<\/em>, <em>secondo<\/em>, <em>contorno<\/em>, <em>formaggio<\/em>, <em>dolce<\/em>, <em>caff\u00e8<\/em>, and if you are ready for a nap, an <em>amaro<\/em> (typical Italian herbal liqueur). In smaller towns dinner starts around 7.30 or 8 pm; in the south people often sit down later, around 9 pm.<\/p>\n\n<h3 class=\"wp-block-heading\">Antipasto: starter<\/h3>\n\n<p class=\"wp-block-paragraph\">Italians often open dinner with appetizers: <em>affettati<\/em>, cheese, and grilled vegetables marinated in olive oil, the so-called <em>sott&#8217;olio<\/em>. On the coast, order an <em>antipasto di mare<\/em>, a selection of cold seafood pickled in olive oil and lemon. If you trust your waiter, ask for the <em>antipasto della casa<\/em>, a mix of the house favourites.<\/p>\n\n<h3 class=\"wp-block-heading\">Primi piatti<\/h3>\n\n<p class=\"wp-block-paragraph\">Forget the Italian dishes you find abroad: <em>fettuccine Alfredo<\/em> and macaroni and cheese do not exist in Italy. Pasta is king everywhere, from the far north to Sicily, in a huge variety of shapes, fillings and sauces. Risotto is common too, especially in the north.<\/p>\n\n<p class=\"wp-block-paragraph\">Pasta should be served <em>al dente<\/em>. If it is overcooked, we say it is <em>scotta<\/em>. A good restaurant will bring a <em>formaggiera<\/em>, the small bowl of grated <em>parmigiano<\/em> or <em>pecorino<\/em>. If the waiter forgets, just ask. Meat and fish take the lead. A classic order is the <em>bistecca alla fiorentina<\/em>, the grilled T-bone steak: it often arrives <em>al sangue<\/em> (rare), but you can ask for it <em>cotta a puntino<\/em> (medium) or <em>ben cotta<\/em> (well done).<\/p>\n\n<p class=\"wp-block-paragraph\">The Italian coastline is long, and so is the list of <em>pesce<\/em> (fish) and <em>frutti di mare<\/em> (seafood). Both meat and fish are cooked in different ways: <em>bollito<\/em> (boiled), <em>grigliato<\/em> (grilled), <em>fritto<\/em> (fried), <em>in umido<\/em> (stewed), <em>al vapore<\/em> (steamed), <em>al forno<\/em> (in the oven), <em>in padella<\/em> (pan fried). Water is easy to order: <em>acqua naturale<\/em> (still) or <em>frizzante<\/em> (sparkling).<\/p>\n\n<p class=\"wp-block-paragraph\">For wine, order <em>una caraffa<\/em> (a pitcher) of <em>vino della casa<\/em>, <em>un bicchiere<\/em> (a glass), or <em>una bottiglia<\/em> (a bottle). Local house wine is often cheaper and better than the bottled list. A <em>dolce<\/em> at the restaurant can be a slice of <em>tiramis\u00f9<\/em>, a <em>panna cotta<\/em>, a Sicilian <em>cannolo<\/em>, or a simple <em>macedonia<\/em> (fresh fruit salad). When you arrive, the waiter (<em>il cameriere<\/em>) or the host (<em>il maitre<\/em>) will ask <em>&#8220;Avete prenotato?&#8221;<\/em>, &#8220;Do you have a reservation?&#8221;. A reservation is <em>una prenotazione<\/em>. You can book by phone with a simple <em>&#8220;Vorrei prenotare un tavolo per due, per le otto&#8221;<\/em>, &#8220;I&#8217;d like to book a table for two, at eight&#8221;.<\/p>\n\n<p class=\"wp-block-paragraph\">Once you sit down, the waiter brings <em>il men\u00f9<\/em>. If you have allergies or dietary needs, say <em>&#8220;Sono allergico a&#8230;&#8221;<\/em> (&#8220;I am allergic to&#8230;&#8221;) or <em>&#8220;Sono vegetariano \/ vegetariana&#8221;<\/em>. For gluten, try <em>&#8220;Non posso mangiare il glutine, avete piatti senza glutine?&#8221;<\/em>.<\/p>\n\n<p class=\"wp-block-paragraph\">To call the waiter back, a soft <em>&#8220;Scusi!&#8221;<\/em> is enough; in Italy you never snap your fingers or whistle. When you are ready to leave, ask <em>&#8220;Il conto, per favore&#8221;<\/em>. The bill usually includes <em>il coperto<\/em>, a small cover charge for bread and table service, between one and four euros per person. The <em>servizio<\/em> is sometimes added too, especially for groups; if it is already on the bill, you do not need to tip on top. You will first see <em>Antipasti<\/em> (starters), then <em>Primi piatti<\/em> (pasta, risotto or soup), then <em>Secondi piatti<\/em> (meat or fish), followed by <em>Contorni<\/em> (sides, listed separately because they do not come with the main), and finally <em>Dolci<\/em> (desserts) and <em>Bevande<\/em> (drinks). At the bottom you often find <em>Caff\u00e8 e liquori<\/em>.<\/p>\n\n<p class=\"wp-block-paragraph\">Prices are in euros and tax is always included; you never add it at the end. Many places offer a <em>men\u00f9 fisso<\/em> or <em>men\u00f9 del giorno<\/em>, a complete meal at a set price, often the best value at lunchtime.<\/p>\n\n<p class=\"wp-block-paragraph\">A small warning: dishes marked with an asterisk are often frozen (<em>surgelato<\/em>), and by law a footnote at the bottom must say so. This is normal for some fish and seafood and is not a sign of low quality.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"trattorie\">Historic trattorias and osterie worth knowing<\/h2>\n\n<p class=\"wp-block-paragraph\">A <em>trattoria<\/em> is a family-run restaurant, simpler and cheaper than a <em>ristorante<\/em>. An <em>osteria<\/em> was originally a place to drink wine with a small dish on the side; today the difference is mostly a matter of style. Some historic addresses have been serving food for over a century and are still part of daily life in their cities.<\/p>\n\n<p class=\"wp-block-paragraph\">In Florence, <em>Trattoria Sostanza<\/em>, in via del Porcellino, opened in 1869 and is known for its butter chicken and the <em>bistecca alla fiorentina<\/em>. In Rome, <em>Armando al Pantheon<\/em>, a few steps from the Pantheon, has been run by the Gargioli family since 1961 and serves classic Roman dishes like <em>cacio e pepe<\/em> and <em>coda alla vaccinara<\/em>.<\/p>\n\n<p class=\"wp-block-paragraph\">In Milan, <em>Trattoria Milanese<\/em>, in via Santa Marta, dates back to 1933 and is famous for <em>risotto alla milanese<\/em> and <em>cotoletta<\/em>. In Naples, the historic pizzeria <em>L&#8217;Antica Pizzeria da Michele<\/em>, in via Cesare Sersale, has been baking pizzas since 1870 and offers only two classics, <em>margherita<\/em> and <em>marinara<\/em>.<\/p>\n\n<p class=\"wp-block-paragraph\">In Bologna, <em>Trattoria Anna Maria<\/em>, in via delle Belle Arti, is famous for fresh hand-rolled <em>tortellini in brodo<\/em> and <em>tagliatelle al rag\u00f9<\/em>. In Venice, <em>Cantina Do Mori<\/em>, in San Polo, opened in 1462 and is one of the oldest <em>bacari<\/em> in town, serving <em>cicchetti<\/em> (small bites) with a glass of wine.<\/p>\n\n<p class=\"wp-block-paragraph\">These places are useful to know not only for the food, but also for the vocabulary on the menu: many regional names you will only see on local handwritten boards.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"regions\">Regional Italian cuisine: a quick guide<\/h2>\n\n<p class=\"wp-block-paragraph\">Italian food is really twenty different cuisines: every region has its own ingredients, names and traditions. A short tour helps you read menus from north to south.<\/p>\n\n<p class=\"wp-block-paragraph\">In Tuscany, look for <em>ribollita<\/em>, a thick bread and vegetable soup, and <em>pappa al pomodoro<\/em>. In Liguria, the star is <em>pesto alla genovese<\/em>, a sauce of basil, pine nuts, garlic, olive oil and <em>parmigiano<\/em>, usually served with <em>trofie<\/em> or <em>trenette<\/em>.<\/p>\n\n<p class=\"wp-block-paragraph\">In Lazio, the classic Roman pasta dishes are <em>carbonara<\/em>, <em>amatriciana<\/em>, <em>cacio e pepe<\/em> and <em>gricia<\/em>. In Campania, pizza is the king, especially the Neapolitan <em>margherita<\/em>, but you will also find <em>spaghetti alle vongole<\/em> and desserts like <em>sfogliatella<\/em> and <em>bab\u00e0<\/em>.<\/p>\n\n<p class=\"wp-block-paragraph\">In Emilia-Romagna, the home of fresh egg pasta, the menu often lists <em>tortellini in brodo<\/em>, <em>tagliatelle al rag\u00f9<\/em>, <em>lasagne<\/em>, <em>parmigiano reggiano<\/em> and <em>prosciutto di Parma<\/em>. In Sicily, try <em>arancini<\/em> (fried stuffed rice balls), <em>pasta alla Norma<\/em> with aubergines, and the famous <em>cannoli<\/em> filled with sweet ricotta.<\/p>\n\n<p class=\"wp-block-paragraph\">Two more regions worth knowing: Piedmont, with <em>agnolotti del plin<\/em>, <em>brasato al Barolo<\/em> and <em>bagna cauda<\/em>; and Puglia, with <em>orecchiette con le cime di rapa<\/em>, <em>focaccia barese<\/em> and <em>burrata<\/em>. These names will help you pick a real local dish instead of the safe tourist menu.<\/p>\n\n<p class=\"wp-block-paragraph\">A small extra tip: when the menu lists a regional speciality, the waiter is usually happy to explain. A simple <em>&#8220;Cos&#8217;\u00e8 esattamente?&#8221;<\/em> (&#8220;What is it exactly?&#8221;) opens a short conversation that often ends with a better choice than the safe pasta.<\/p>\n\n<h2 class=\"wp-block-heading\" id=\"mistakes\">Common mistakes tourists make when eating out in Italy<\/h2>\n\n<p class=\"wp-block-paragraph\">A few cultural notes will help you avoid the most typical misunderstandings. First, do not order a cappuccino after lunch or dinner: in Italy milk-based drinks belong to the morning. Waiters may smile, but they will be surprised.
